Creamy Chicken and Rice Soup
Yields 4 Servings

Ingredients:

-1 lb. Chicken Breast (Already cooked and shredded)
-1 tbsp. Canola Oil
-2 Medium Carrots (Chopped)
-2 Celery Ribs (Chopped)
-½ Cup Onion (Chopped)
-½ tsp. Garlic (minced) - How To
-1/3 Cup Long Grain Rice (Uncooked)
-¾ tsp. Basil (dried)
-¼ tsp. Pepper
-2 Cans (14.5 oz) Chicken Broth
-3 tbsp. Flour
-1 Can (5 oz) Evaporated Milk

Directions:

-In a large saucepan, heat oil on medium heat, then sauté the carrots, celery, and onion until tender.
-Add garlic, cook until fragrant.
-Stir in rice, other seasonings, and broth.
-Bring to a boil, reduce heat to a simmer, then cover until rice is tender (About 15 min).
-Add in flour and milk, then mix.
-Bring to a boil, cook and stir until thickened.
-Stir in chicken and heat.
